The Story

St. Hubertus at Rosa Alpina in San Cassiano is Norbert Niederkofler's restaurant — and Niederkofler is the chef who defined what mountain cuisine can be at its most serious.

The philosophy is called Cook the Mountain: only ingredients that grow, live, or come from within the surrounding landscape. No imported fish. No tropical fruits. Only what the Dolomites and their people have produced for centuries. It is a rigorous, beautiful, entirely convincing argument for what fine dining could mean.

Norbert Niederkofler has cooked at Rosa Alpina for over 25 years. His Cook the Mountain philosophy — using exclusively alpine and Ladin ingredients — earned three Michelin stars and established St. Hubertus as one of the defining restaurants of contemporary European fine dining.
