Stuba Adelboden — Intimate interior with red curtains and winter mountain view

The Story

The Alpenblick has stood on Adelboden's Dorfstrasse since 1988, when Hanni and Alfred Inniger laid the foundation for what it would become. Hanni built the wine cellar; Alfred, a trained butcher, ensured that only the right cuts reached the kitchen. In 2014, their son Björn took over the stove. His wife Marianne joined two years later. A decade on, the Stuba carries a Michelin star and 17 Gault Millau points.

The kitchen cooks seasonally, with mostly organic ingredients, and the menu says directly: they know their farmers, butchers, fishermen, hunters, cheesemakers and suppliers by first name. The word on the menu — «verpipäpälä» — is Adelbodner dialect for what they intend to do: spoil you. The concept is tasting menus of four, five or six courses, with or without meat, each course matched to a wine from Hanni's cellar.

The room is Nordic and minimal — stone walls, pendant lights, white linen — and outside the valley holds its shape regardless of the season.

Philosophy

How we work.

  • Rooted but worldly — Adelbodner produce and Swiss alpine tradition, treated with international technique and ambition. The mountain is the inspiration, not the constraint.

  • First-name terms with suppliers — farmers, butchers, hunters, fishermen, cheesemakers. Alfred 'Fredl' Inniger ensures only the best cuts; Hanni's cellar holds the wine.

  • Choose your own journey — four, five or six courses. With meat or without. Each course matched to a wine. CHF 15 per glass pairing.

Signature Dishes

Stuba Adelboden — Beef fillet with dark sauce on grey ceramic plate, Chef Björn Inniger

Variation of Easter Kid (Oster Gitzi) — main course

The seasonal centrepiece — Adelbodner kid goat prepared in multiple ways, with green asparagus, mountain potato and celeriac. Alpine spring cooking at its most direct.

Stuba Adelboden — Dish with sauce poured tableside, seasonal ingredients

Brüggli char + 10g Oona caviar

Local char from Brüggli with pea, verjus and spring onion — with an optional supplement of 10g Oona caviar (CHF 30). Paired with Malterdinger Chardonnay 2021, Weingut Bernhard Huber.

Stuba Adelboden — Gnocchi with wild mushrooms and seasonal vegetables

Spinach-ricotta tortelloni, monk's beard, brown butter, morel

The pasta course — handmade tortelloni filled with spinach and ricotta, with monk's beard, brown butter and morel mushrooms. Paired with Gamay Vieilles Vignes 2022, Domaine Cornulus.

Cheese selection from Fromage Mauerhofer, Sumiswald

Cheese selection from Fromage Mauerhofer, Sumiswald

The cheese course — a selection from Mauerhofer in Sumiswald, served with preserves, crispbread and Schlorziflade (a Swiss cream pastry). Paired with Chasselas Vieilles Vignes 2015.

Wiedlisbach blackberry, honey, vanilla, yoghurt

Wiedlisbach blackberry, honey, vanilla, yoghurt

The dessert — Wiedlisbach blackberry with honey, vanilla and yoghurt. Paired with Bramusa 2023, Beppe Marino, Piemont. A composed close that earns its place after the mountain savoury courses.

The Feeling

Feels like

Nordic and minimal — stone walls, pendant lights, white linen tables. The room is calm and precise in the same way that the cooking is. Outside: Adelboden and the Bernese Alps.

Best time

Dinner in winter or autumn — the valley at night, the fire, the full six-course menu with wine pairing

The CinCin Notes

Adelboden is a proper mountain village — not a resort, not a show. The Alpenblick has been on the Dorfstrasse since 1988, and the Stuba is what it became when Björn Inniger came home from training and took the kitchen seriously.

The format is simple: you choose four, five or six courses; you choose with or without meat; Hanni finds you a wine for each. Alfred's cuts are the best available in the valley. Marianne makes sure the room runs without you noticing it running.

Come for a winter evening. Take the full six courses. Let Hanni build the pairing. This is what the Bernese Oberland looks like when it's cooking at its best.
