Ästad Vingård sits in the Åkulla beech forests near Tvååker, in the hinterland of Varberg on Sweden's west coast. It is one of the country's largest vineyards: organic vines grow here and the estate makes its own wine, with a focus on sparkling. But the vineyard is only the beginning. There is Sinnenas Spa, a spa built entirely around the senses and the surrounding nature reserves; Restaurang ÄNG, holding both a green and a regular Michelin star; and rooms, the newest of which each have their own natural pool, bathing jetty and sauna.

Sinnenas Spa
A spa for the senses
Sinnenas Spa — the "spa of the senses" — lies in the heart of twelve nature reserves and brings them all indoors: scents, sounds, materials and ideas drawn from the landscape around the vineyard. Each spa environment carries its own fragrance composition, developed with a Swedish fragrance house — moist autumn leaves meet freshly sawn timber, warm forest soil meets cool water. Recorded sounds from the surroundings blend with quiet melodies.
Indoor and out, all year round: a 39 °C outdoor pool while the wind sweeps through the spa garden. Spring-water ponds with rainbow trout and crayfish for the short, clear plunge. The sculpted, timber-milled "Underwater Sauna" with a window below the waterline. And Smakbaren, where between baths you order a glass of wine and small plates. Open daily 08:00–23:00, ages 13 and up.

Restaurang ÄNG
A star in a glass house on the meadow
ÄNG — Swedish for "meadow" — stands as a glass solitaire alone in the field. A path winds across the gently undulating meadow up to the waiting glass house, and there the first scene of a roughly four-and-a-half-hour tasting experience begins, leading guests through several rooms — and below the earth's layers. The interior is by Copenhagen's Norm Architects and the Japanese-Scandinavian Karimoku Case Study.
Executive Chef Filip Gemzell cooks from Halland outward: ingredients sourced as close as possible, joined by techniques and ideas from kitchens around the world. Cellar Master Emma Ziemann has built a cellar of top European wines alongside the house cuvées from next door — the vineyard. ÄNG has held a Michelin star since 2021 and the green star for its rigorous sustainability. Those who wish stay the night and return for the Avsmakningsfrukost — a tasting breakfast, the ÄNG way.

The Vineyard & the Sparkling Wine
Organic vines in the beech forests
Ästad is one of Sweden's largest vineyards — and an unusual one, sitting far to the north of the wine world, in the Åkulla beech forests of Halland. The vines are farmed organically, with a focus on sparkling wine. In autumn the harvest is picked by hand, then it moves to the winery next door: steel tanks, oak barrels, the bottle fermentation, the disgorging — and finally the bottle with its own label.
You can experience all of it: a guided vineyard tour, a wine tasting, or the Vineyard Package that brings together a tour, a tasting and the four-course Farmer's menu. It is a wine that speaks of a very northern terroir — and of the attempt to grow something of one's own this far up.

Sjöparken
Rooms with a private natural pool
Ästad's newest rooms sit in the middle of the vineyard, around a large natural pool: Sjöparken, the "lake park." Twenty-eight rooms, designed by Norm Architects and arranged in seven villas of four suites each, built off-site as modules and assembled in place to disturb guests as little as possible.
Each Sjöparken room is 35 m², with its own bathing jetty and outdoor shower, a private sauna and a lounge area behind generous windows. The design is minimalist, with Nordic and Japanese notes — warm timber, muted tones, plenty of light. The real luxury is just outside the door: the plunge into the natural pool before the day has even begun.

Logen & the Halland Table
Nordic cooking in the old barn
Not every evening needs to last four and a half hours. Restaurant Logen — the "barn" — serves Nordic cooking under old roof beams: local Halland flavours, honest and warm, with the house wines in the glass. Alongside it are Smakbaren at the spa for small plates between baths, and the Vineyard Bar for an afternoon glass.
Together they make a whole day of eating and drinking: a rustic breakfast to begin, a light lunch at Smakbaren, a long menu at ÄNG or an easy evening at Logen. All from the same landscape, at different speeds.

The People Behind Ästad
Winemakers, chefs, hosts
A vineyard this far north, a glass Michelin restaurant in the meadow, a spa built from the scents of the nature reserves — all of it is held together by a handful of people. Winemaker Claes Bartoldsson tends the vines and the cellar. In ÄNG's kitchen stand Executive Chef Filip Gemzell and, on the wine, Cellar Master Emma Ziemann. Edvin Elghag runs the hotel, Veronica Carlsson the hospitality.
It is led by Daniel Carlsson, CEO and co-owner, who helped finance and build ÄNG. His ambition is a simple one: a place where everything — wine, spa, kitchen, rooms — speaks of the same landscape.

The Hosts
Ästad Vingård belongs to the Carlsson family and is run by Daniel Carlsson as CEO and co-owner. His ambition is to let everything speak of the same landscape — the organic wine, the spa drawn from the scents of the nature reserves, the cooking at ÄNG and Logen, the rooms by the natural pool. Much of it is made in-house: the vines, the sparkling wine, the spa's fragrances, even the way the new rooms are built. It is an attempt to bring a whole experience of wine, water, forest and table together in a single place in Halland.
